  • Pu-Erh Soup With Lotus Root
    Ingredients

    • 150g lotus root (in slices)
    • 130g chicken meat (in pieces)
    • 1 litre of brewed Pu-Erh
    • 1 teaspoon of salt
    • 30g red dates
    • 1 piece dried cuttlefish
    • 30g of dried oysters
    Optional: Chicken may be replaced with pork. Slow cooker maybe be used instead of claypot. A few tea leaves may be added to get a strong tea aroma and flavor. Cooking over charcoal heat using claypot will bring out the best flavor.

    Method

    • Skin the lotus root and slice.
    • Cut the chicken into little pieces.
    • While the tea boils, soak dates, cuttlefish and oyster in hot water for 10 minutes.
    • Finally, put all ingredients in a claypot and add a teaspoon of salt before steaming for four hours. Serve soup hot.
